Suppose you'd like to switch back from the new Start Menu to the former Start Screen, as in Windows 8....what do you do? Right-click a blank spot on your Taskbar, and choose "Properties" and click on that....
When this window appears, look along the tabs at the top, and choose "Start Menu" and then click on that to open its window....
The first item shows a checkbox ahead of "Use the Start menu instead of the Start Screen." To change to the Start Screen, remove this check from the box.
When you click on "Apply" down below, you will be invited to Restart your computer to make the change. When it restarts, you'll have the Screen instead of the new Start menu. "So why do that?" you ask. Because: now on the Start Screen, you can click the little downward-pointing arrow near the left bottom edge, to switch it to an alphabetical display of all of your Apps, and you'll be surprised how many you really do have, when you see the full list. Lots more than you saw on your new Start menu...
To switch back to the new Start menu, just reverse the process, and replace that check mark in the box ahead of "Use the Start menu....." and then after another Restart, you'll be back where you started.
